Spicing Up Pizzas, Cakes, And Doughnuts With Spuds

Yet another way to add variety to pizzas and other baked goods is to use an unlikely vegetable – potatoes – as a topping or as a main ingredient. A New England pizza chain makes a mashed potato sauce for its Italian pies, but also offers a meatloaf, mashed potato and herb pizza, and a mashed potato, bacon, and scallion version. In Korea, pizza chains, including Pizza Hut Korea, routinely use frozen potatoes as a topping. Susan Weller of the United States Potato Board says potatoes can also be used in other kinds of baked goods to enhance texture, taste and shelf-life. "Potato doughnuts made with instant mashed potatoes are being offered at on-trend bakeries and cafes," she said. Other spud-based baked treats include potato cakes and chocolate potato doughnuts with crème anglaise.
